Happy Birthday! Feliz Cumpleaños! To ME!!!!

If you follow our Blogs, social media sites and web pages or have been a sponsor of our business over the past 15+ years you know just how important food and wine is to us. So of course a Birthday celebration is going to orbit heavily around some type of culinary adventure. This was my 50th Birthday and we chose to stay in town and not take some elaborate trip somewhere. Actually we did take the boat out to Tabarca Island but that is another Blog.

We discovered Rincon de Capis on one of the Tapas weekends that take place here in Torrevieja. They had delicious Tapas and while there we saw their “Menu Creativo”, a seven course menu for only $25 Euro that included a 1/2 bottle of wine per person. It turned out to be a very satisfying evening.

Dish #1 – Miso soup with wakame and prawns. Simple yet complex with many layers. A delicious beginning.
Dish #2 – Grilled octopus on truffled potato cream. This was some of the most tender octopus I have had. The potato pure’ was lightly flavored with truffles.
Dish #3 – Grouper fish and spider crab crepe au gratin. This dish is a decadent as it looks and sounds. I’m starting to get full.
Dish #4 – Warm salad of duck morsels, nuts balsamic dressing. OK, this was a really good idea to follow that crepe dish. So far everything is perfect.
Dish #5 – Confit of cod loin chipped garlic dried tomatos. Back to the big rich dishes! During the Tapa event they had offered a cod confit dish. I personally had never thought of confit with a fish before this.
Dish #6 – Iberian pork loin fig sauce. I rarely can eat this much food. These were not small plates. Everything was spot on amazing. It is a set menu so they have obviously perfected these dishes. As a chef I would find this a nightmare to cook the same thing every single night. I usually favor restaurants that change their menus nightly. This one however I would absolutely come back and do again. It was perfect.
Dish # 7 – Tartita mousse 2 chocolates with oreo. I have never been a desert eater. Well, it is just normal for every menu here to come with a desert. I am getting used to it. Terri-Lynn is in heaven.

The Art of Life

Tony and Terri-Lynn met in 1987 as teenagers. In 1991 they were married.  Tony has been a professional musician his entire life and spent the 90’s touring and releasing albums.  In 2001 the couple left the cities and moved to a small community on the Oregon coast. This is where they fell into television production and film making. In 2004 Makai Ohana Productions was founded and the couple produced advertising and creative content for hundreds of tourism related businesses and government entities in Southern Oregon and Northern California. Realizing the industry was evolving towards the internet they re-branded the business in 2012 to Xplore Film.  This company would now be an international business producing films world wide as well as an NGO in West Africa where the couple provides clean water boreholes, scholarships and even a prosthetic hand project.

In 2018 Tony and Terri-Lynn with their dog Bisque Kitt packed the belongings they could carry on their backs and flew to Spain. They bought a home and planned to spend equal time between the two countries running the business.  Then Covid hit and the world closed.  By 2020 they realized Spain, and specifically Torrevieja was now home.  They bought a sailboat and started to create a life on the Costa Blanca of music, film, events and community.
